Here is a great bread recipe to give as gifts or to much on at breakfast time. Again, I can't get my husband to get breakfast, but he'll sip on a smoothie or scarf down a piece of this bread. 

Banana Bread with Coconuts and Walnuts






Ingredients

1 1/2 cups of whole-wheat flour

1 tsp. baking soda

1/4 tsp. ground cinnamon

1/4 tsp. kosher salt

1 cup sugar

2 large eggs

2 Tbsp. vegetable oil

1 1/2 cups coarsely mashed ripe bananas ( 2 or 3)

1/2 cup plain Greek yogurt

1 tsp. vanilla extract

1/2 cup coconut flakes 

1/2 cup walnut halves ( I didn't have any on hand)



Directions

1. Preheat oven to 350 degrees F

2. In a bowl, whisk together first 4 ingredients

3. In a large bowl, beat sugar and eggs until thick. Stir in oil, bananas, yogurt and vanilla. Fold in flour mix, coconut and walnuts.





I had a great little helper

4. Pour into greased 9-by 5- inch pan. Baked for 75 minutes. Let cool on rack and serve.

  1. I'm not a coconut girl but I do love the idea of adding walnuts :D

  2. You can nix the coconut! :) A lot of people aren't coconut fans. I am sure it is just as great without it.
