It is my BIRTHDAY week!

I am getting closer and closer to the big 3-0!


Cannot believe it.

My birthday is Sunday but the mailman dropped by an early birthday gift from Amazon. Ok, I bought it myself, but still. Here is my loot:

My sweet 88 year old Granny had sent me a card that arrived today too. I walked outside this morning in tears because the church bells I heard from the Methodist Church (I live in Mayberry) remind me of her. We would listen to the church bells while we rocked on the front porch True story. There is nothing quite like small town life.


This afternoon the UPS dropped off the buffet my hubs got me for Mother's Day/ my birthday. I can't wait to get it put together for our dining room.

And I decided to bake myself a cake. Birthday cake (not just plain cake) is my favorite food in the whole entire world (followed closely by chocolate chip cookies and fried shrimp.) This is why I have to run so much!



I found a recipe that combined chocolate chip cookies and funfetti cake and that is right up my alley. Here is the recipe:

(Warning: there is nothing healthy about what you are about to bake. Use caution.)


Cookie Cake 

Ingredients:

2 deep dish pie crusts
chocolate chip cookie dough
 (you can make your own, but I bought a roll to save time)
1 box of Funfetti cake mix
vegetable oil
eggs
icing
sprinkles





Directions:

1) Use the cookie dough to make a 1 inch layer in the bottom of each pie crust





2) Prepare the cake mix as directed on the box. Once mixed, place equal halves of the batter into each pie shell on top of the cookie dough.




3) Bake cakes at 350 degrees for 35-45 minutes. Cake baking times vary by oven. My was still a bit gooey after 40 minutes so I needed the full 45.

4) Ice your cake once it has cooled, top with sprinkles, and serve.
